Mirassou® California Cabernet Sauvignon

About the Wine:

Our 2010 Mirassou California Cabernet Sauvignon is fruit forward, displaying deep rich blackberry and black currant flavors, with hints of toasted oak and brown spice. This full-bodied wine has a plush mouthfeel, finishing softly with a hint of vanilla.

Viticulture Notes:

For this wine, we selected Cabernet grapes from California’s celebrated regions. The cooler temperatures of the North Coast and Central Coast create a longer growing season, giving the grapes more time to develop deep, expressive flavors. The 2010 growing season brought a few challenges to these regions; a wet spring delayed bud break, and a late summer heat wave stressed the vines. But, the warmer temperatures helped the grapes to reach maturity and develop rich flavor characteristics. Although yields were lower than normal, the resulting grapes displayed remarkable quality.

Food and Wine Pairings

Winemaker Notes:

The grapes for our 2010 Cabernet Sauvignon were gently destemmed, resulting in some whole berries. The must was fermented in a combination of cone sweep, rotary and upright fermenters for five to seven days at a maximum temperature of 85˚F to retain fruitiness and soften the tannins.
