Winemaker Notes:
The grapes were harvested during the night and early in the morning in order to keep the fruit cool to preserve delicate aromas and flavors. The juice was cold settled for 48 hours and then was fermented in stainless steel tanks to retain their naturally high acidity level and contribute a clean, crisp structure to the wine. After almost two weeks of a slow and cold fermentation, the Mirassou California Riesling was blended with a small percentage of Viognier (1.4%), which added floral notes to the nose. Together, these varietals display ripe fruit aromas and add a subtle layer of warm fruit and sweetness to the wine.
Taste Profile: Our Mirassou California Riesling is distinctly soft and approachable yet crisp and fruit-forward. The wine offers aromas of peach, apricots, and spice with intense fruit flavors of red apple and peach. As a result of the naturally firm acid levels, this wine is crisp and delicately structured and pairs beautifully with richly sauced poultry or seafood.
