The grapes used to create the 2006 Mirassou California Sauvignon Blanc were sourced from a number of California's finest growing regions, including: Central Coast, Sonoma County, Lake County and Mendocino. The combination of both cool and warm growing regions contributes a gentle complexity to the flavor profile by allowing the crisp acidic fruit characters from our northern vineyards to blend with the ripe fruit characters from the southern vineyards.
The grapes were mostly hand harvested with some harvested by machine at night to minimize exposure to the heat and gently whole cluster pressed to eliminate harshness. The grapes were then cold settled for 48 hours prior to fermentation. The fermentation lasted two to three weeks in stainless steel tanks to retain their naturally high acidity level and contribute a clean, crisp structure to the wine. The juice was racked off the lees to maintain the bright flavors and acidity found in Sauvignon Blanc.

The wine was made in a style to retain and enhance the fruit aromas and flavors present in the vineyard. It's a zingy wine that features tropical fruit and melon notes highlighted by subtle grassy characters. The crisp acidity and bright fruit in our 2006 Mirassou California Sauvignon Blanc make it easy to pair with a wide variety of food. This wine is at its best if enjoyed within one year of release, but should be able to age in the bottle for up to two years.
